CALCUTTA, “the city of joy”, a 320 yr old city which is the capital of Bengal, is not only the place of 3 Nobel Laureates and many intellectuals – it is also the hub of cuisine connoisseurs of India.

HISTORY OF THE CUISINE: A lot of Bengal's culinary habits came from the British and other immigrants. The key culinary influence was the tea and snack food. Every railway station in Bengal serves chop, cutlet, omlette, sandwich to go with tea to millions of commuters. It has been ruled by Mughals since early 12th century as they have enriched the palate with korma, kalia, kebab, pulau, biriyani. The Jewish settlers started the bakeries. The partition of India following independence in 1947 had Bengal dominated by mega city of Calcutta. The influence has been in the sweet shops and street foods like samosa, rolls and phuchka. Since 1960s Calcuttans got into the habit of Chinese dishes. The recent trend is for Mexican, Tibetan, Thai and Mediterranean cuisine.

SPICES AND INGREDIENTS: Calcutta has a special usage of spices which is unique in the world. In addition to the flavor, it has medicinal properties. Examples are the onion seeds, celery seeds, and the trump card of five-spice (a mixture of cumin, fennel, fenugreek, kalonji, and mustard seeds). Unique to Bengal is the use of freshly ground mustard paste. Calcutta offers a wide varity of cereal, lentil, vegetable, fresh water fish from Ganges delta, poultry, fruits, milk and coconut. Mutton, the goat meat, is also used for cooking. Sweets – made of chana (a type of cottage cheese) are part of Bengalis everyday life. Bengalis are primarily rice eaters, and the rainfall and soil lends itself to rice production. Luchi (circular fried bread) or Porotha (multi-layered, pan fried, bread) are also used as the primary food item which have stuffed versions.
